Green stuff with pearl barley
This is great in the summer to use up any rocket, watercress or herbs that need a trim. Anything can go in, but if you use kale or chard, you'll need to remove anything woody and blanch briefly beforehand.
INGREDIENTS
Green stuff: Watercress (remove any thick stems) • Rocket • Parsley • Spring onions
Pomegranate seeds
Parmesan (finely grated)
Seed mix (pumpkin, sunflower, sesame, red pepper flakes)
Lemon • Olive oil • Salt n pepper
METHOD
Cook the pearl barley as normal, sometimes I add a teaspoon of bouillon powder for flavour.
Heat seeds in a dry pan for a few minutes on a low heat until they slightly change colour.
Wash all the green stuff and chop it a bit.
Drain pearl barley and add a good glug of olive oil, squeeze of lemon, lots of parmesan, salt n pepper and taste it. This should taste good, if not add more parmesan and seasoning.
You can eat this on its own, with feta or goats cheese or put some fish on the BBQ.
